Beet and Carrot Slaw recipe

Beets make for a sweet and flavorful slaw when grated raw. Mixed with orange carrots and lively vinaigrette, this salad is both a crowd-pleaser and a kid-pleaser.

Ingredients:

3 beets, peeled, shredded
3 carrots, peeled, shredded
½ cup finely chopped parsley
2 tablespoons olive oil
2 tablespoons fresh lemon juice
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
½ teaspoon salt
¼ teaspoon black pepper

Directions:

1. Toss together beets, carrots, and parsley in a large bowl.

2. In a small bowl, whisk together oil, lemon juice, vinegar, mustard, honey, salt, and pepper.

3. Pour over beet mixture, toss to coat, and serve.
