Beet and Feta Crudités recipe

This elegant appetizer really could not be easier. Boiled beets, which are often lacking in flavor and creativity, are pureed with feta cheese and spices to make a simply delectable spread. The recipe calls for black olives and fresh basil leaves to be served with the spread over bread slices, but also try it as a complete sandwich for a lavish lunch.


2 large red beets, peeled, roughly chopped
1 cup feta cheese
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 garlic clove
¼ teaspoon caraway seeds
¼ teaspoon ground coriander
¼ teaspoon red pepper flakes
Pita chips or sliced baguettes, for serving
½ cup pitted black olives, halved, for serving
Torn fresh basil leaves, for serving


1. Bring a large pot of water to a boil. Add beets and cook until softened, 20 to 30 minutes. Remove from water, drain, and transfer to food processor. Add remaining ingredients and puree until smooth.

2. Smeared spread over pita chips or toasted baguette slices. Top with olives and basil leaves and serve.
