Beet, Orange, and Apple Salad recipe

This recipe makes for an elegant salad that can be served year-round. Add a bit of fresh orange zest in the summer or perhaps a handful of toasted pecans in the winter.

Ingredients:

5 large beets
1 orange, peeled, cut into segments
1 red apple, seeded, chopped
¼ cup chopped fresh parsley
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon red wine vinegar
1 teaspoon honey
½ teaspoon salt
¼ teaspoon black pepper
1 avocado, peeled, pitted, chopped

Directions:

1. Bring a large pot of water to a boil. Add beets and cook until tender, 25 to 35 minutes. Remove, cool slightly, peel, and chop.

2. Combine beets, orange, apple, and parsley in a large bowl. In a separate small bowl, whisk together oil, lemon juice, vinegar, honey, salt, and pepper. Pour over beet mixture and toss to coat. Top with chopped avocados and serve immediately.
