Orange and Ginger-Glazed Beets recipe
The natural sweetness of beets is brought out with fresh citrus. This fruity side dish will become a staple for your household dinners.
Ingredients:
1 pound beets, cut into wedges
1 cup fresh orange juice
1 teaspoon fresh orange zest
1 teaspoon grated, peeled fresh ginger
1 teaspoon sugar
½ teaspoon salt
2 tablespoons unsalted butter
Directions:
1. Place beets, juice, zest, ginger, sugar, and salt in a medium saucepan. Bring to a boil over high heat, reduce to a simmer, cover, and cook until beets are tender, about 20 minutes. Remove beets from saucepan and set aside.
2. Bring remaining orange mixture to a boil and cook down until thick and syrupy, 3 to 6 minutes. Add butter, stir to melt, and pour glaze over beets. Serve warm or cold.
