Roasted Beet and Avocado Sandwich recipe
Transform your kitchen into an artisan café with this gourmet sandwich that's a snap to prepare. Roasted beets come together with savory goat cheese and earthy avocados to create a healthy and delicious meal. Serve with a pasta salad and side of fresh fruit for a simple, wholesome lunch.
Ingredients:
2 medium beets, roasted and sliced into 1/2-inch thick rounds
½ cup baby spinach leaves
1 teaspoon olive oil
1 teaspoon red wine vinegar
1 teaspoon fresh lemon juice
4 slices multigrain bread, toasted
¼ cup soft goat cheese
½ avocado, thinly sliced
Directions:
1. Preheat oven to 400°F. Wrap beets individually in foil, place in oven, and roast until softened, 45 to 60 minutes. Remove and let cool slightly, then remove skins and slice thinly. Place in a medium bowl with spinach and toss with oil, vinegar, and lemon juice.
2. Place two slices of bread on a serving plate. Spread 2 tablespoons on goat cheese on one slice of bread. Top with half of the beet-spinach mixture. Top with half of the avocado slices and place other slice of bread atop. Slice in half on the diagonal. Repeat with remaining bread and ingredients for other sandwich.
